  • Simple fats are triglycerides (95 percent of body fat), which are divided into saturated fatty acids , and unsaturated fatty acids. Saturated fatty acids , which are solid at room temperature are obtained from animal fats and include meat , egg yolks, dairy products and shellfish. Unsaturated fats which are liquid at room temperature come from plant sources including corn oil , safflower oil , olive oil ,and peanut oil.
  • Compound fats are simple fats combined with other chemicals.
  • Derived fats combine simple and compound fats.
